what i’ve been making lately. recipes for tomato confit, super easy granola, and my beloved spaghetti sauce
winter is here. it’s below zero daily, i’m taking more baths, my dog is dressing in layers, and i’m officially vitamin D deficient. but honestly, i’m welcoming the months of jazz/beeswax candles/slow-cooked food with open arms. today, i wanted to share the food that i’ve been making during SAD season. ft. my best attempt at recipes, as someone who isn’t great at following them.
tomato confit: while designing my recovery meal plan, i came across aimee france’s tomato confit video. inspired, i threw some heirlooms, romas, rogue alliums, flakey salt and a shit ton of olive oil into my baking dish. hours later, i pulled a pot of gold from the oven. my uninteresting winter tomatoes gave birth to 3 separate delights. a confit to be consumed by the spoonful,the base for a soup, and liquid tomato gold.
