lunch time can be finicky. time constraints and low blood sugar often find me feverishly shoving a boiled egg into my face before scavenging for other kitchen scraps to fill my belly. how uninspiring. lately i’ve been trying to get better about prioritizing the midday meal, ensuring that it’s nourishing, quick, and tasty. this lunch was all of the above. it came together in about 10 minutes, plus it’s ridiculously easy to riff on.
